Created by Alexis Michel, this delicious, decadent recipe is vegan grain-free, gluten-free, refined sugar-free, nut-free, and oil-free…so you can enjoy each bite guilt-free. Try baking a loaf this weekend and see how fast it’ll disappear off your kitchen counter!

Ingredients

Dry
-1 cup Organic Gemini tigernut flour
-2 tbsp Bob’s Red Mill tapioca starch
-2 tbsp ground flax
-1/4 cup + 1 tbsp unsweetened cocoa powder
-1/2 tsp sea salt
-3/4 tsp baking powder
-1/4 tsp baking soda
-3 tbsp Madhava organic coconut sugar
-2 tbsp Lily’s Sweets sugar-free dark chocolate chips

Wet
-2/3 cup unsweetened coconut yogurt
-1/4 cup + 3 tbsp organic unsweetened coconut milk (can sub any plant-based milk)
-1 flax egg
-1 tsp vanilla extract

Instructions


1. Prepare flax egg. Combine 3 tbsp ground flax + 1 tbsp water. Stir and set aside.
2. Pre-heat oven to 350 F
3. Combine dry ingredients (except the chocolate chips) in a medium-sized bowl. Whisk to remove any lumps
4. Combine wet ingredients in a small-sized bowl. Stir until smooth. Add to the dry ingredients. Stir until you form a batter.
5. Pour into a loaf pan lined with parchment paper. Top with dark chocolate chips.
6. Bake for 25-30 mins.
