With the autumn season upon us, everything seems to feel a bit cozier, so we love how this recipe adds in cinnamon, one of the staple flavours for fall with its sweet, woody, and spicy flavour. Deliciously sweet if you add juicy, ripe strawberries, these muffins are to die for, whether you have them for breakfast, lunch, or dinner (you could also eat them between meals — we won’t judge).

Makes 12-15 Muffins
Ingredients:
2 cups all purpose flour
1 t baking powder
2 t baking soda
1/2 t salt
1/2 t cinnamon
1 cup milk
1 tablespoon of apple cider vinegar
1 cup neutral tasting oil
1 cup granulated sugar
2 eggs
1/2 cup yogurt
1 cup fresh/frozen Mandair Farms strawberries
1/4 th cup pumpkin seeds
1/2 cup dark chocolate chips
2-3 tablespoons of oats
Instructions:
Preheat the oven to 350 F
Start by sifting the dry ingredients in a bowl, set the bowl aside
In a glass/bowl mix the milk and apple cider vinegar, stir and let it sit for 5 minutes
In the meantime, add the oil and sugar to a bowl and whisk for 4-5 minutes
Add the eggs one at a time and whisk them in
Add the yogurt and milk+vinegar mixture
Whisk well till incorporated
Add the dry ingredients to the wet ingredients and fold slowly
Add most of the berries, seeds & chocolate and fold it in (reserve some for the garnish)
Line a muffin tin with muffin cups
Using an icecream scooper or a big spoon, distribute equal amounts of batter into the muffin cups
Garnish with strawberries, chocolate chips, pumpkin seeds & oats
Bake in a preheated oven for 25-30 minutes or until the skewer comes out clean
