Summer is the season for fresh fruits.
Plums, strawberries, nectarines, apricots…you name it. The summer sunshine works its magic and all the fruits are nice and juicy. From roaming various farmers’ markets in the past few weeks, we’ve picked up an abundance of delicious, ripe cherries, so much so that we have had trouble finishing it all! So what should you do with these ripe cherries?

This recipe created by Christianna of @eathappyfeelgood is a perfect way to ensure you get the most out of the cherries you have stockpiled.
Ingredients
2 cups of pitted cherries
2 heaped tablespoons of chia seeds
1/2 cup water
2 tablespoons maple syrup
1 teaspoon vanilla
Instructions
Mix all ingredients in a small pan
Cook over medium heat for about 10 minutes. Stir often.
While cooking, squeeze the cherries so they release extra juice!
