INGREDIENTS
*Serves 4 (if you are cooking for 2, click here for the adjusted portions)
500 g Ground Beef
340 g Linguine
30 g Balsamic Vinegar
265 g Marinara Sauce
2 tsp Chili Flakes
113 g Tomato Sauce Base
113 g Yellow Onion
320 g Sweet Bell Pepper
1/2 cup Parmesan Cheese, shredded
2 tbsp Italian Herb Spice Blend
14 g Parsley
INSTRUCTIONS
Bring a medium pot of salted water to a boil. Start the recipe when the water is boiling.
Wash and dry all produce. Cut peppers into 1/2-inch pieces. Finely chop parsley. Cut onion into 1/2-inch pieces.
To the boiling water, add linguine. Cook, for 10-12 min, until tender but still firm to the bite. Reserve 1 and 1/3 cup cooking water (double for 4 portions). Strain linguine and set aside, off heat.
While linguine cooks, in a large pot, heat 1 tbsp oil (double for 4 portions) over medium-high heat.
When the pot is hot, add onions and peppers. Cook, stirring often, for 3-4 min, until tender.
Stir in Italian Herb Spice Blend, tomato sauce base and chilli flakes. Cook, stirring often, for 30 sec, until toasted. Season with salt and pepper.
To the pot with veggies, add beef. Cook, breaking up beef with a spoon, for 3-5 min, until no longer pink.** Season with salt and pepper. Reduce heat to medium. Stir in marinara sauce, vinegar and half the parsley. Cook, stirring occasionally, for 3-4 min, until slightly thickened.
To the pot, add linguine, reserved cooking water and half the Parmesan. Stir together, for 1 min, until coated. Serve beef bolognese. Sprinkle with remaining Parmesan and remaining parsley.
Enjoy!
** Health Canada recommends cooking beef to a minimum internal temperature of 160oF.
