HOME BAKING RECIPE || The Perfect Buttery Shortbread Cookies for Gifting

Over the years, I’ve learned that the best gifts to give are always the ones that come out of my kitchen.

These adorable buttery shortbread cookies are a staple in my book, a go-to that is simple enough to whip up in less than an hour, but always manage to bring the biggest smiles to the recipients. What I love about this recipe is how versatile it is. For Christmas, I would cut them out into Christmas trees and gingerbread men; for baby showers, they can be cut out into the shapes of pacifiers and bottles. They can also be decorated with royal icing for those extra-special occasions!

Ingredients

  • 150 grams of unsalted butter at room temperature

  • 1/2 cup confectioners sugar

  • 1/2 tsp pure vanilla extract

  • 1 1/2 cup all-purpose flour

  • 1/2 tsp salt

Instructions

  1. In a stand mixer fitted with a paddle attachment, beat butter and vanilla extract until pale and fluffy.

  2. Add confectioners sugar and salt; mix until combined.

  3. Add flour in 3 parts while beating on low. Scrape bowl down, and mix with a spatula until well combined. Make sure not to over mix!

  4. Preheat oven to 350F (177C)

  5. Roll the dough out with a rolling pin to approximately 1/4 inch thick. Cut with your preferred cookie cutter. Extra dough can be rolled out again to cut.

  6. Place slides, spaced at least 1/2 inch apart onto a baking sheet lined with parchment paper or a silicone mat.

  7. Bake in the oven for about 10-15 minutes, or until slightly golden on top. Rotate baking sheet in the oven halfway through. Transfer to a wire sheet to cool.
