HOME BAKING RECIPE || Light, Warm and Fluffy Matcha White Chocolate Muffins

Who loves matcha everything?

If you are a matcha fan then this specialty muffin recipe is for you. While we love blueberries, berries, and other sweet and tarty muffin recipes, a matcha-based muffin recipe is refreshing and offers a different flavour profile to explore. Add white chocolate to the mix and you have a heavenly pastry for the weekend.

Ingredients

  • 1 3/4 cups (220g) all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 1/2 tbsp matcha tea powder

  • 1/2 cup (100g) granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup (125mL) 3.25% milk

  • 1/2 cup (115g) unsalted butter, melted

  • 1 bar (100g) white chocolate, chopped

Instructions

  1. Preheat oven to 350ºF (175ºC).

  2. Line 2 standard 6-cup muffin silicone trays with paper liners.

  3. Whisk together all-purpose flour, matcha tea powder, salt, baking powder, and granulated sugar in a bowl. Set aside.

  4. In another bowl, whisk together eggs, vanilla, and milk.

  5. Pour wet-ingredient mixture into the bowl with the dry ingredients. Stir just until flour disappears. Fold in melted butter and then the chopped chocolate. Mix as little as possible.

  6. Divide batter between lined muffin pans.

  7. Bake until a toothpick inserted into the center of the muffin comes out clean, about 20 to 25 minutes. Let cool in the pan for 10 minutes. Remove muffins from the pan and allow to cool on a wire rack.
